This chicken casserole is delicious and very easy to make. Serve it with rice for a quick and nutritious weekday meal.

I just recently asked my Aunt Rosangela, also known as Tia Kika, for this wonderful recipe. The first time I had this dish, was when I was around 12 years old and was living with her and her family in Ohio. Believe it or not, I still remember the very first bite I took. I couldn't believe how delicious it was, and how all of ingredients just came together so nicely. I also remember eating more than could fit in my stomach and being very full afterwards. It was a very satisfying full feeling though, a feeling of having eaten a food that was not only satisfying for the body, but also for the soul.

I say this dish was satisfying for the soul because Tia Kika put so much love into making this that you could literaly feel it with every bite. In fact, she put love into absolutely everything she did for us, and that is why I have such ingrained and wonderful memories of my stay in Ohio. So even though this dish is very simple at its core, and it tastes absolutely delicious by itself, the true secret ingredient is the love you put into making it.

This dish has two main textures: the softness of the chicken with the cream of chicken soup, the crunchiness of the celery and cashews. When you try this with rice and the dried Chinese noodles on top, you will want to place this recipe at the top list of your most cherished dishes.

Ingredients you will need to make Tia Kika’s Cashew Chicken

  • 4 medium sized chicken breasts
  • 1 bay leaf
  • 3 cans of cream of chicken soup
  • 2 cups of cashew nuts
  • Half a bunch of celery, finely chopped
  • 2 medium onions, finely chopped
  • Dried Chinese noodles
  • 350 F pre-heated oven

How to make Tia Kika’s “Cashew Chicken.”

  • Cook the chicken breasts in water, bay leaf, salt, and pepper.
  • Remove chicken breasts from water and let it cool to room temperature.
  • Meanwhile, add cream of chicken soup, cashew nuts, celery, and onions to a deep bowl.
  • Shred the chicken by hand, and add to the deep bowl where all ingredients are. Mix it thoroughly. Add more salt and pepper if you think it is necessary.
  • Place it in the pre-heated oven for 40 minutes.
  • Serve with rice and add dried Chinese noodles on top.
